Dry Pumpkin Masala
I love pumpkin.
And today features a dry pumpkin masala in my kitchen.
I use the term "masala" very loosely here, believe me. I am very big on eating food as it is,.. with as little masala as possible. My mother always says this: As one grows older, one needs to listen to what one's body says, and not what one's tongue says.
I totally believe that. So for the past maybe 4 years, I have started cooking food with as least masala as possible.
So here goes.
I have some orange pumpkin with me today... which I have cut into cubes.
i will first temper with some gingelly oil ( i am a big fan of gingelly oil..) some mustard seeds, a lot of urad dhaal and some fennel seeds. Added to these are some curry leaves and dried red chillies.
Added to that will be the pumpkin pieces and salt.
dry fry until the pumpkin is nice and soft.
hmmmm...
